WonTon Bombs

Tonight I made Won-Ton Bombs! They’re made with chicken, turkey, beef or all three meats!

I got the idea because me and my mother were going to make chocolate peanut butter won-tons but never did. So I saw the wrappers in the fridge and thought, “mmmm, that would be good with meat inside!”

Mom was planning meatloaf for dinner, so I asked her if I could make dinner and she said ok.

Here’s how to make them:

Meat Filling:

1 envelope onion soup mix

2 lbs. ground meat (I used chicken, turkey and beef)
1 1/2 cups bread crumbs
2 eggs
3/4 cup water (less if using fresh not dried bread crumbs)
1/3 c ketchup

Combine all thoroughly – this works best if you use your hands! Just be sure to wash them well when you’re done handling the raw meat.

Purchase one package won-ton wrappers – available in the produce section of the grocery store. These work best if chilled, don’t let them come to room temperature before using.

Wrapping instructions are on the package, but you can wrap them around the meat in lots of different ways – see the photo at right. Just remember to wet them with water where they touch so they stick together.

Once wrapped, spray them generously with oil. I used my Pampered Chef oil sprayer to avoid the taste of the canned spray, you could brush them with oil I guess but that might make them way more greasy.

Bake at 350 degrees F for 15 minutes until cooked through and crispy.

We tried them with ketchup, but they’d be good with duck sauce or sweet and sour sauce too!

Corn Salad Spectacular!

This corn salad is a good way to use up leftover corn on the cob. This is a spicy but cool dish, you can eat it on crackers.

Corn Salad Spectacular

Ingredients:
3 ears corn on the cob cooked, cold
8 small mildly spicy peppers, seeded and diced
1/2 - 1 cup light sour cream

Mix all together in bowl, serve with crackers!
(This tastes great after a night in the fridge).
